“Proper American-style mac and cheese – beautifully gooey and full-on, in-yer-face cheesy! Mac ’n’ cheese’ is a classic American pasta dish – everyone loves it. Sometimes it’s done so badly in the convenience area, it’s almost become famous for being horrible, but when you do it properly, trust me, it’s an absolute killer. Feel free to use any tubular pasta you want. I’ve made this dish my own by lightening it with sweet tomatoes and giving it some crunch with delicious breadcrumbs. Just you wait till you try it! This dish isn’t going to win any prizes in the nutrition department, but you can, and should, balance it with a nice salad. If you only have it once in a while as a special treat, it’ll do you no harm. ”

  1. Dieser Auflauf ist in ganz Italien ein Dauerbrenner. Er kommt bei Familientreffen und Festen auf den Tisch und in der Abbazia di Farfa, eine Abtei gleich bei Rom, immer sonntags – sehr zur Freude der Mönche, wie ich bei meinem Besuch dort feststellte. Ich selbst hatte die Lust daran verloren, nachdem ich ihn im letzten Jahr mehrmals in Schulen zubereitet hatte, dabei aber bis hin zu den Nudeln nur das Billigste vom Billigen verwenden durfte. Bekehrt wurde ich in einer Schule in Altamura in Apulien, in der es den Auflauf zum Mittagessen gab. An die 1000 Portionen wurden auf einen Schlag ausgegeben. Aber da laut einem Regierungserlass in Schulküchen Bio-Pasta und bestes Olivenöl verarbeitet werden müssen und in diesem Fall auch noch der Mozzarella ganz frisch war, schmeckte er wahnsinnig lecker.
  2. Den Backofen auf 200 °C vorheizen und in einem großen Topf Salzwasser zum Kochen bringen. In einem ausreichend großen zweiten Topf einige kräftige Schuss Öl erhitzen und die Zwiebel, Knoblauch und Chili darin bei mittlerer bis niedriger Hitze in etwa 10 Minuten ohne Farbe weich dünsten. Falls Sie frische Tomaten verwenden, erst mit einem kleinen Messer den Stielansatz herausschneiden und die Tomaten dann ins kochende Wasser tauchen, bis sich nach 40 Sekunden die Haut löst. Mit einem Schaumlöffel herausnehmen (nicht abgießen!) und in einer Schüssel mit kaltem Wasser abschrecken. Enthäuten, die Samen herausquetschen und das Fruchtfleisch grob hacken.
    Die frischen oder die Dosentomaten mit 1 kleinen Glas Wasser zur Zwiebel geben. Aufkochen und dann etwa 20 Minuten sanft köcheln lassen. Anschließend in der Küchenmaschine oder im Mixer zu einer lockeren Sauce verarbeiten. Das Basilikum hineinpflücken und die Sauce mit Salz, Pfeffer und eventuell dem Rotweinessig abschmecken.
    Das Wasser im großen Topf wieder zum Kochen bringen. Die Orecchiette darin nach der Packungsanweisung garen und abseihen. Mit der Hälfte der Tomatensauce und 1 Handvoll Parmesan vermischen. Ein ausreichend großes Blech oder eine Auflaufform mit etwas Öl ausstreichen. Eine Lage Pasta einfüllen, darüber etwas Tomatensauce, dann 1 Hand voll Parmesan und schließlich etwa ein Drittel des Mozzarellas. In dieser Reihenfolge alle Zutaten aufbrauchen, wobei die letzte Käseschicht etwas dicker ausfallen sollte. Den Auflauf 15 Minuten im Ofen backen, bis er eine goldbraune Kruste hat und es in der Form leise blubbert. In Italien isst man ihn häufig zimmertemperiert oder sogar kalt, aber heiß mag ich ihn lieber.
