Instructions

Cookies:

  • In a medium bowl whisk together flour and salt. Set aside.

  • Place butter into the bowl of your stand mixer, fitted with the paddle attachment, beat until smooth and light, about 40-60 seconds.

  • Add in the sugar and beat until smooth.

  • Gradually add the flour mixture and beat until you get a smooth dough.

  • Roll the dough between 2 sheets of parchment paper to 1/4 -inch thick. Transfer on the baking sheet and refrigerate for at least 30 minutes or until firm.

  • Meanwhile preheat your oven to 350 F

  • Remove the dough from the refrigerator and cut into bite-sized squares.

  • Bake the cookies for 10-12 minutes or until the edges are lightly browned.

  • Allow to cool completely before frosting.

Buttercream frosting:

  • In a large bowl mix together the softened butter, powdered sugar and vanilla extract.

  • If the frosting seems to be dry, add 1-2 tablespoons milk and mix until combined.

  • Divide the buttercream frosting into 3 parts.

  • Tint one with red and another one with green food coloring gels.

  • Once the cookies are completely cooled, decorate with the buttercream frosting (simply spread some frosting on each cookie with a knife) and sprinkle with Christmas sprinkles.

  • Allow the frosting set before you store the cookies.
