At the Russ and Daughters store in Manhattan, which specializes in smoked and cured fish of all kinds, I found a goat cream cheese that inspired this sandwich.

Ingredients
Yield:One serving
- 1½ounces smoked salmon (more if desired)
- ½ounce goat cheese (about 2 tablespoons)
- 1 to 2tablespoons plain yogurt
- Several cucumber slices (about 1½ ounces)
- A squeeze of lemon
- Salt
- freshly ground pepper
- Chopped chives or dill
- 2slices whole-grain sandwich bread, rye bread or a heartier whole-grain country bread

In a bowl, mash the goat cheese with a fork. Add the yogurt, and mix together until smooth. Spread half on one slice of bread, and top with the smoked salmon. Slice the cucumbers very thin, and layer them over the salmon. If desired, season the cucumbers with a little salt and pepper, and squeeze on some lemon juice. Sprinkle the chopped chives or dill over the cucumbers.

Spread the remaining goat cheese mixture over the other piece of bread. Place on top of the cucumbers, press down and cut the sandwich in half.
Tip
- Advance preparation: This will keep well for a day. Wrap tightly in plastic wrap, and place in a bag. Keep cold if possible.

No need for two s!ices of bread one is enough, serve open-faced Scandinavian style.

I agree with Elma. Open sandwich like in Scandinavia. Add some radishes and voila a great sandwich.

use **very thin** bread, and spread the cream cheese thin, and pile on the salmon and herbs -- otherwise you'll feel like you're eating a cream cheese sandwich garnished with salmon, & not the reverse :) Otherwise, awesome recipe!

Used hot-smoked salmon and Ak-Mak crackers. Skipped the lemon, salt, and herbs but was great with a thin slice of cucumber and some carrots/celery sticks on the side for a light lunch.

I sub out the bread with eggs -cooked omelet style using a rectangular pan from the asian market. Layered ingredients same order & Open faced. Had fresh thyme on hand instead of dill. Flavors still worked IMO..

The goat cheese/yoghurt mixture is a revelation -- makes the goat cheese spreadable. I prefer this closed-faced, with bread toasted.

I discovered years ago, after realizing that traditional cream cheese especially aggravated my symptoms of lactose intolerance, that soft goat cheese made an excellent substitute to use on a bagel with smoked fish. I can handle goat- or sheep-milk-based products, but not cow’s milk, unless it’s in the form of hard aged cheeses. Might work for others too.

Excellent. I make it open-faced and slice the two pieces of prepared bread into thirds. Perfect canapes for two or three with a glass of wine or some vodka. Also a good starter or a light lunch.
