Every once in a while, you just need some white bread. Or in my case, hubbs loves some white bread. After weeks of multi-grain, wheat, sprouted grain etc bread loafs, he loves a week of white bread with his scramble or sandwiches and anything else.

The sneaky me, found ways to add something more to that White bread. The all white flour bread, doesnt really have anything nutritious in it. A White bread surely is a light and helpful when the stomach in upset. It is soft and tastes wonderful, but it would be even more wonderful if it had something more to offer. right 🙂

Enter beans! I added pureed great northern beans in this loaf instead of all water. You can use any beans that cook to a nice soft texture. White beans work best to maintain the color 🙂
You know I will add anything to a bread right, lentils, cauliflower, mung sprouts 😉

The beans add extra moisture to the loaf making the slices even softer and tastier. Even the crust is softer. The loaf can be made oil-free. You can make burger buns with the dough as well.

White Bean Sandwich Bread Loaf
Allergen Information: Free of Dairy, egg, corn, soy, nut. can be made oil-free
Makes 1 8.5 by 4.5 bread pan

Ingredients:
¼ cup warm water
1 Tbsp active yeast
1 tsp raw sugar or maple syrup
3 cups or more bread flour or unbleached white flour
1 cup cooked or canned great northern beans or other white beans
¾ cup water
1 tsp salt (use 1 ¼ tsp salt if using unsalted cooked beans)
1 Tbsp extra virgin olive oil (optional)
Add herbs, olives or roasted garlic for variations.

Method:
In a bowl, add ¼ cup warm water, yeast and sugar. Mix and let sit until frothy (5 minutes)
Blend the white beans and salt with ¾ cup water into a smooth puree.
Add the bread flour, oil and white bean puree into the yeast mixture and knead into a soft dough. Knead well for 7-8 minutes. Add more flour if needed, or a spray or so of water if needed.
Spray water on top of the dough, Cover the bowl with a towel and let sit in a warm place for 1.5 hours or until the dough doubles.
Use a Tbsp or so flour on the risen dough, punch it down and shape into a loaf. Pull on all sides to shape, or flatten a bit and roll into a jelly roll. Place seam side down into a greased or parchment lined bread pan. Spray water on top. Sprinkle sesame seeds or oats to cover the top. Cover and let sit for 35-40 minutes or until more than 1.5 times its size.
Bake in pre-heated 375 degrees F for 40 minutes.
Cool completely before slicing. Refrigerate for upto 7 days.

To make burger buns, divide dough into 8 or 10. roll into a balls. Place on baking sheet. Spray water and top with sesame seeds. Bake at 375 degrees F for 30 minutes.

    I used this recipe the other day to make burger buns for my quinoa patties. I used pureed veggies leftover from making broth instead of beans, and I didn’t add any water. They came out so good!     Thank you! One more question, when I make the burger buns do I take it from the step of punching down the dough to shape in to the loaf pan and letting it rise – do I shape it in to the buns and let it rise?

      yes. instead of shaping into a loaf, divide the dough and make smooth balls. Let them rise then bake. They burger buns will rise faster, so bake after 30 minutes.

    can I knead this in a kitchenaid mixer versus by hand and if so, would I knead for less time?

      i used a mixer. it takes the mixer a few minutes to incorporate the ingredients well and the next few minutes to develop the gluten. stop the mixer at 5 minutes and distribute the dough if it is rising up the dough hook.
      7 minutes by mixer, 8 minutes or longer by hand.

      anything other than yeast will not result in a similar airy bread. you can make flat breads like naan, use baking powder in the dough.

      3 cups flour dough should fit a regular machine. If there is a Basic white bread setting, use that.
